Since its establishment, we have been fermenting our wines with wild yeast and unfiltered.
We are particular about the taste that only Fujino Winery can produce.

Grapes cultivation, which started in 2000, was a continuous process of trial and error in the beginning, but now bears many varieties of grapes.

Hokkaido’s grapevines survive the harsh cold weather every year, resulting in a good balance of sugar content and acidity, as well as a high level of aroma. The grapes are carefully cared for until they bear fruit, and then watched over and harvested until they are ripe enough to be used for wine.

All grapes, including those from our own vineyards, are grown in Hokkaido.
Wines made from fresh grapes are also popular.

Story

Story
Sapporo Fujino Winery

I want to make healthy wine with as little pesticides as possible.

I started making wine when I wanted to vinify grapes originally produced in the family vineyard as naturally as possible for my frail younger brother, who loved wine, to drink. I started making wine with my sister.

Unfortunately, my brother passed away after a battle with illness, but our winemaking, which is made in close contact with nature, is still the story of two sisters and a brother.

Grapes next to flowers.

At the edge of the rows of grape vines are roses in full bloom. Since grapes also belong to the rose family, they share the same diseases. If a disease is found on roses, there is a possibility that the same disease will eventually appear on grapes. This is a common sight in European vineyards.

Nowadays, preventive technology has developed, so it may not be necessary, but above all, vineyards with roses in bloom are beautiful.

Fujino Winery’s wines are nurtured close to nature. Each wine has its own unique flavor.

Since its establishment, we have continued to use wild yeast fermentation and unfiltered methods to maximize the grapes’ natural complex flavors and aromas.

Each bunch of grapes is carefully selected individually, and de-stemmed by hand.

Not using cultured yeast can be a challenge, but it is this method that produces the gentle and powerful flavors that only our winery can produce.

Traditional

We stick to traditional production methods.

  • ルミュアージュ

    Riddling

Some sparkling wines are made by shaking the bottle slightly each day and rotating the bottle to collect the lees at the mouth of the bottle.

  • ロウ封

    Wax seal

Wax seal to prevent rapid oxidation. It is decorated with colors that match the image of the wine.

  • クヴェヴリ

    Kvevri

We are also challenging the traditional method of making wine using an unglazed jar (kvevri), which can be said to be the starting point of wine making.
